Quick & Easy Chicken, Sweet Potatoes, and Broccoli Recipe
Ingredients:
1 boneless, skinless chicken breast
1 medium sweet potato
1 cup broccoli florets
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
Instructions:
Preheat Oven – Set your oven to 400°F (200°C).
Prepare the Chicken – Place the chicken breast on a baking sheet. Drizzle with olive oil and season with salt, black pepper, garlic powder, and paprika. Rub the spices in evenly.
Bake the Sweet Potato – Wash the sweet potato thoroughly, then poke a few holes with a fork. Place it on a baking sheet and bake for about 25-30 minutes, or until tender.
Roast the Chicken – Place the seasoned chicken in the oven alongside the sweet potato. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Steam the Broccoli – While the chicken and sweet potato are baking, bring a pot of water to a boil. Place the broccoli florets in a steaming basket and steam for about 5 minutes until bright green and tender.
Serve & Enjoy – Remove everything from the oven, let the chicken rest for a few minutes, and then slice. Serve with the baked sweet potato and steamed broccoli for a balanced, nutritious meal.
Tips:
Add a squeeze of lemon over the broccoli for extra flavor.
For a crispy sweet potato skin, rub it with olive oil before baking.
Try adding a drizzle of honey or balsamic glaze for an extra touch of sweetness!
