Quinoa & Avocado Salad π₯
Ingredients:
β’ 1 cup cooked quinoa
β’ Β½ avocado, diced
β’ Β½ cup cherry tomatoes, halved
β’ ΒΌ cup cucumber, chopped
β’ 2 tbsp feta cheese
β’ 1 tbsp olive oil
β’ 1 tsp lemon juice
β’ Salt & pepper
Instructions:
Cook the quinoa β Prepare quinoa according to package instructions and let it cool.
Mix ingredients β In a bowl, combine quinoa, avocado, cherry tomatoes, cucumber, and feta.
Season & serve β Drizzle with olive oil and lemon juice, then add salt & pepper to taste. Mix well and enjoy!
